When it comes to creating a marketplace for our products, we tend to put a lot of focus on developing international markets. That is good because we produce far more food than we hope to consume. However, we cannot afford to overlook the demand we can create here at home.
It’s not just about the grocery stores either. While those are where most of the transactions take place, we also must think of food service distribution. Sometimes that comes in places that we tend to take for granted and overlook in their role as consumers. It’s not just in the home or in restaurants that food is consumed.
Dr. Ashley Johnson is the Director of Food Policy for the National Pork Producers Council (NPPC), and she talks about work being done and a victory scored in the school meals program. While lunch is always a given, the school breakfast program is also an important component. New rules released last month have allowed meat to be a part of the breakfast programs.
While we think about breakfast including things like bacon, ham, or sausage, we may wonder why meat wasn’t found in the school breakfast program for some time. When I was in school, the breakfast program was just getting going, but we had things like breakfast pizza with sausage or ham. So, where did it go?
This action piggybacks the new dietary guidelines that are being worked on right now. This includes things like SNAP programs. Dr. Johnson says that it is important that our protein products are a crucial part of that rollout.
